Cheesesteak Tortellini with Sautéed Peppers and Provolone Cheese Sauce is a rich and indulgent dish that combines the best of Italian pasta and the classic American cheesesteak. Tender tortellini is coated in a creamy provolone cheese sauce, complemented by savory beef, sweet bell peppers, and onions. It’s a comforting and satisfying meal that works for both casual dinners and special occasions.


Ingredients

  • 1 lb cheese tortellini
  • 1 lb beef sirloin or ribeye, thinly sliced
  • 2 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 1/2 cups provolone cheese, shredded
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • Fresh parsley, chopped (for garnish)

Instructions

Cook the cheese tortellini according to the package instructions. Drain and set aside.

While the tortellini is cooking, heat olive oil in a large skillet over medium-high heat. Add the thinly sliced beef and cook for 2-3 minutes until browned and cooked through. Remove the beef from the skillet and set aside.

In the same skillet, add the sliced onion and bell pepper. Cook for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the skillet.

Reduce the heat to medium-low and stir in the heavy cream. Bring to a simmer and let it cook for 2-3 minutes.

Add the shredded provolone cheese to the sauce, stirring constantly until the cheese melts and the sauce becomes smooth.

Return the cooked beef to the skillet and stir to combine. Season with salt and pepper to taste.

Add the cooked tortellini to the skillet and toss to coat with the sauce. Cook for 2-3 minutes until everything is heated through.

Serve the cheesesteak tortellini garnished with fresh parsley.

 

Notes

  • For best results, use fresh tortellini and freshly grated provolone cheese to ensure a smooth, flavorful sauce.

  • Feel free to customize the dish with additional vegetables or a different protein to suit your tastes.
