Ingredients
- 1 cup (200g) granulated sugar
- ½ cup (115g) unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp ground cinnamon
- ¼ tsp salt
- 2 medium apples, peeled and diced

Instructions
Preheat your oven to 350°F (175°C) and grease or line an 8-inch round or square cake pan.
In a large mixing bowl, cream the butter and sugar together until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
Gradually add the dry ingredients to the wet mixture and mix until just combined.
Fold in the diced apples gently with a spatula.
Spread the batter evenly into the prepared pan.
Bake for 35–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Dust with powdered sugar before serving, if desired.
