  • Author: Lisa

Description

This baked apple loaf cake is an easy, crowd-pleasing treat packed with fresh apples and warm cinnamon. Moist and perfectly sweetened, it’s ideal for cozy mornings, fall gatherings, or a simple dessert with a rustic charm. With minimal ingredients and no fuss, it’s a recipe you’ll come back to again and again.

Ingredients

Scale
  • 1 cup (200g) granulated sugar
  • ½ cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 2 medium apples, peeled and diced
  • Optional: powdered sugar for dusting

Instructions

Preheat your oven to 350°F (175°C) and grease or line an 8-inch round or square cake pan.

In a large mixing bowl, cream the butter and sugar together until light and fluffy.

Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.

Gradually add the dry ingredients to the wet mixture and mix until just combined.

Fold in the diced apples gently with a spatula.

Spread the batter evenly into the prepared pan.

Bake for 35–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Dust with powdered sugar before serving, if desired.

Notes

  • Best served warm or at room temperature.

  • Use firm, baking apples like Granny Smith for the best texture.

  • To enhance flavor, toast nuts before adding.

  • Great for meal prep—freezes and reheats beautifully.

  • Serve with whipped cream or dust with powdered sugar for a quick finishing touch.
