  • 1/2 cup turkey bacon, cooked and crumbled

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened. Stir in the garlic and cook for another minute.
  2. Sprinkle the flour over the onions and garlic, stirring constantly for about 1 minute.
  3. Slowly pour in the chicken broth while stirring to prevent lumps from forming.
  4. Add the diced potatoes, salt, black pepper, smoked paprika, and dried thyme. Bring to a boil, then reduce heat and let simmer for 15-20 minutes or until the potatoes are fork-tender.
  5. Use a potato masher or an immersion blender to slightly mash some of the potatoes for a creamier texture.
  6. Stir in the milk, heavy cream, shredded cheddar cheese, and sour cream. Cook for another 5 minutes until everything is well combined and heated through.
