This Bacon Mushroom Swiss Meatloaf is a next-level comfort food dinner featuring juicy ground beef, sautéed mushrooms, and melted Swiss cheese stuffed inside—then topped with a smoky turkey bacon lattice. Ingredients
- 2 lbs ground beef
- 1 cup breadcrumbs
- 2 eggs
- 1/2 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, finely chopped
- 1 cup shredded Swiss cheese
- 6–8 slices turkey bacon
- 2 tbsp Worcestershire sauce
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
- 1 tsp paprika
Instructions
- Preheat oven to 375°F (190°C).
- In a pan, cook mushrooms, onion, and garlic until softened, then let cool slightly.
- In a large bowl, combine ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, salt, pepper, thyme, paprika, and the cooked mushroom mixture. Mix gently until just combined.
- Place half of the meat mixture into a greased loaf pan, then sprinkle half of the Swiss cheese in the middle.
- Add the rest of the meat mixture on top, sealing edges so the cheese is inside.
- Lay slices of turkey bacon over the top of the meatloaf.
- Bake uncovered for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
- Sprinkle remaining Swiss cheese on top during the last 5 minutes of baking so it melts.
- Rest for 10 minutes before slicing and serving.
