Ingredients
For the taco shells:
- 6 small flour tortillas
- 2 tbsp melted butter
- ¼ cup granulated sugar
- 1 tsp ground cinnamon
For the cheesecake filling:
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup whipped topping
For the strawberry crunch topping:
- 1 cup crushed golden sandwich cookies (like vanilla Oreos)
- 2 tbsp strawberry gelatin mix
- 2 tbsp melted butter
For garnish:
- 1 cup diced fresh strawberries
- Extra whipped topping (optional)
Instructions
- Preheat your oven to 375°F (190°C). Brush both sides of each tortilla with melted butter.
- Mix sugar and cinnamon in a small bowl, then sprinkle over both sides of the tortillas.
- Drape the tortillas over the bars of an upside-down muffin tin to form a taco shape. Bake for 8–10 minutes or until crisp and golden. Let cool completely.
- In a bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, then mix until combined. Fold in the whipped topping.
- In a separate bowl, mix crushed cookies, strawberry gelatin mix, and melted butter until crumbly.
- Spoon or pipe the cheesecake filling into the cooled taco shells.
- Top with diced strawberries and sprinkle generously with the strawberry crunch topping.
- Add extra whipped topping if desired and serve chilled.
Notes
-
Make sure cream cheese is fully softened to avoid lumps in the filling.
-
Tortilla shells should be fully cooled before adding the filling to prevent sogginess.
-
The crunch topping can be stored in a sealed bag for several days.
-
Swap strawberries for blueberries, raspberries, or mango for a twist.
-
For a richer taste, add a layer of melted white chocolate inside each shell before filling
