  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 can (20 oz) crushed pineapple in juice (do not drain)
  • 1 cup sweetened shredded coconut
  • 1 container (8 oz) whipped topping, thawed
  • 2 cups mini marshmallows
  • ½ cup chopped cherries (optional)
  • ½ cup chopped nuts (optional)

Instructions

  1. In a large mixing bowl, combine the instant pudding mix with the crushed pineapple and its juice. Stir until well blended.
  2. Add the shredded coconut and mix to combine.
  3. Fold in the whipped topping until smooth and creamy.
  4. Stir in the mini marshmallows, and if using, add the chopped cherries and nuts.
  5. Cover and refrigerate for at least 1 hour before serving to allow it to thicken and chill.
  6. Stir gently before serving and enjoy cold.

Notes

  • Don’t drain the crushed pineapple; the juice is necessary to activate the pudding mix.

  • For extra depth, toast the shredded coconut before mixing.

  • Pat cherries dry before mixing in to avoid color bleeding.

  • Chill for at least 1 hour before serving — overnight is even better.

  • Easily make it dairy-free using coconut whipped topping.
