- 1 can (20 oz) crushed pineapple in juice (do not drain)
- 1 cup sweetened shredded coconut
- 1 container (8 oz) whipped topping, thawed
- 2 cups mini marshmallows
- ½ cup chopped cherries (optional)
- ½ cup chopped nuts (optional)
Instructions
- In a large mixing bowl, combine the instant pudding mix with the crushed pineapple and its juice. Stir until well blended.
- Add the shredded coconut and mix to combine.
- Fold in the whipped topping until smooth and creamy.
- Stir in the mini marshmallows, and if using, add the chopped cherries and nuts.
- Cover and refrigerate for at least 1 hour before serving to allow it to thicken and chill.
