For the cod:
- 4 cod fillets (about 6 oz each)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
For the crispy fries:
- 4 large russet potatoes, peeled and cut into thin fries
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Optional: fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill to medium-high heat and lightly oil the grates.
- Pat the cod fillets dry with paper towels. In a small bowl, mix olive oil, garlic powder, paprika, salt, pepper, and lemon juice.
- Brush the cod fillets with the seasoning mixture on both sides. Set aside.
- Place the cod on the grill and cook for about 3–4 minutes per side, or until the fish is opaque and flakes easily with a fork. Remove from grill and keep warm.
- Preheat oven to 425°F (220°C) for the fries.
- Toss the cut potatoes in a bowl with vegetable oil, salt, pepper, and paprika until evenly coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
- Serve the grilled cod with the crispy fries on the side. Garnish with chopped parsley if desired.
Notes
-
Use fresh cod for best flavor and texture, but thawed frozen fillets work in a pinch.
-
Soaking the potatoes is key for crispy fries—don’t skip this step.
-
Adjust seasonings to your taste. Add chili flakes or herbs for more variety.
-
Use a meat thermometer to prevent overcooking cod.
-
Serve immediately for the best fry texture—crispy and hot right out of the oven or air fryer.
