- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 6 cups beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- 3/4 cup pearl barley
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
Preheat a large pot over medium heat and add olive oil.
Sear the beef pieces until browned on all sides, then remove and set aside.
In the same pot, sauté the onion, garlic, carrots, and celery until softened.
Return the beef to the pot and pour in the beef broth and diced tomatoes.
Stir in thyme, oregano, bay leaf, salt, and black pepper.
Bring to a boil, then reduce heat and let simmer for about 40 minutes.
Add the barley and continue to simmer for another 30 minutes or until barley is tender.
Remove the bay leaf and adjust seasoning if needed.
Garnish with fresh parsley before serving if desired.
Notes
- Beef Selection: For the most tender soup, use chuck roast, brisket, or round steak.
- Barley Cooking Tip: Pearl barley is best for this soup since it cooks faster than hulled barley.
- Thickening Option: If you like a thicker soup, let it simmer longer or mash some of the vegetables.
- Make-Ahead Tip: Beef barley soup thickens as it sits—add extra broth when reheating.
- Freezing Tip: If freezing, cook the barley separately and add it when reheating to prevent it from becoming too soft.
- Flavor Boost: Add Worcestershire sauce, soy sauce, or a splash of balsamic vinegar for a richer broth.
