Ingredients

Scale
  • 12 oz egg noodles
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 large onion, thinly sliced
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 tbsp Worcestershire sauce
  • 2 cups beef broth
  • 1 tsp cornstarch mixed with 1 tbsp water (slurry)
  • 1/2 cup sour cream
  • 1 cup shredded Gruyère or Swiss cheese
  • 1/4 cup chopped fresh parsley (optional)

Instructions

Cook the egg noodles according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease and set aside.

In the same skillet, melt butter and add sliced onions. Cook over medium-low heat, stirring occasionally, until caramelized and golden brown, about 20-25 minutes.

Stir in minced garlic, salt, black pepper, thyme, and Worcestershire sauce. Cook for another minute.

Pour in the beef broth and bring to a simmer. Add the cornstarch slurry and stir until the sauce thickens slightly.

Return the cooked beef to the skillet and stir to combine. Reduce heat to low and mix in the sour cream.

Add the cooked noodles and toss to coat in the sauce. Stir in shredded Gruyère cheese until melted and combined.

Garnish with fresh parsley and serve warm.

Notes

Caramelization Takes Time: Don’t rush the onions! Slowly caramelizing them over medium-low heat brings out their natural sweetness and enhances the dish’s deep flavor.

Choose the Right Noodles: Egg noodles work best because they absorb the sauce well without getting mushy. If substituting, go for fettuccine or rotini.

Cheese Matters: Gruyère is ideal because it melts beautifully and adds a nutty, creamy texture. If unavailable, use Swiss cheese or Provolone.

Make It Ahead-Friendly: Prepare the beef and onion mixture ahead of time and store separately from the noodles to prevent them from getting soggy. Reheat, mix, and enjoy!

Customize to Taste: Add mushrooms, bell peppers, or spinach for extra veggies, or swap Greek yogurt for sour cream for a lighter version.

This dish is a guaranteed crowd-pleaser—creamy, savory, and packed with comfort in every bite! 🧅🍜🧀
