Ingredients

For the taco shells:

  • 6 small flour tortillas
  • 2 tbsp butter, melted
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon

For the strawberry crunch topping:

  • 10 golden sandwich cookies (like Golden Oreos), crushed
  • 2 tbsp strawberry gelatin powder
  • 2 tbsp melted butter

For the cheesecake filling:

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

For the strawberry topping:

  • 1 cup fresh strawberries, diced
  • 1 tbsp sugar (optional)

Instructions

Preheat your oven to 375°F (190°C). Lightly grease the back of a muffin tin.

Brush both sides of the tortillas with melted butter. In a small bowl, mix the sugar and cinnamon. Sprinkle it over both sides of the tortillas.

Drape each tortilla over two bars on the backside of the muffin tin to create a taco shape. Bake for 8–10 minutes or until golden and crisp. Let cool.

In a bowl, combine crushed golden sandwich cookies, strawberry gelatin powder, and melted butter. Stir until crumbly and set aside.

In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.

In a separate bowl, whip the heavy cream to stiff peaks. Fold the whipped cream into the cream cheese mixture until fully combined.

Spoon or pipe the cheesecake filling into the cooled taco shells.

Top with diced strawberries and sprinkle generously with the strawberry crunch topping.

Serve chilled or immediately for the best texture.
