Ingredients

  • For the crust:

    • 2 flour tortillas (8-inch)
    • 2 tbsp olive oil (for brushing)

    For the filling:

    • 1 lb ground beef or turkey
    • 1 packet taco seasoning mix
    • ½ cup refried beans
    • 1 cup salsa
    • 1 ½ cups shredded cheddar cheese
    • 1 ½ cups shredded mozzarella cheese
    • ¼ cup sliced black olives (optional)
    • 1 small tomato, diced
    • 1 small onion, finely chopped
    • ½ cup shredded lettuce
    • ¼ cup sour cream (for garnish)
    • ¼ cup jalapeño slices (optional)

Instructions

Preheat your oven to 400°F (200°C).

Brush both sides of the flour tortillas with olive oil. Place them on a baking sheet and bake for 5-7 minutes, flipping halfway through, until they’re golden and crispy.

While the tortillas are baking, cook the ground beef or turkey in a skillet over medium heat until browned. Drain any excess fat. Add the taco seasoning mix and follow the package instructions, usually adding water and simmering until thickened.

Spread a layer of refried beans on one of the baked tortillas, followed by the cooked seasoned meat mixture. Drizzle salsa over the top of the meat.

Sprinkle a mix of cheddar and mozzarella cheese evenly over the filling.

Place the second tortilla on top, pressing down gently.

Return the stacked pizza to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.

Remove from the oven and top with sliced olives, diced tomato, and onion.

Garnish with shredded lettuce, sour cream, and jalapeño slices, if desired.

Slice and serve hot.
