  • 1 lb ground beef
  • 3 cups cooked and cooled white rice (preferably day-old)
  • 2 tbsp vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 2 eggs, lightly beaten
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • ½ tsp black pepper
  • 2 green onions, chopped

Instructions

Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook until browned, breaking it up as it cooks. Remove from the skillet and set aside.

In the same skillet, add the remaining 1 tbsp of vegetable oil. Sauté the diced onion until softened, then add the minced garlic and cook for another 30 seconds.

Push the onion and garlic to one side of the skillet. Pour the beaten eggs into the empty space and scramble them until fully cooked.

Add the cooked rice, peas, and carrots to the skillet. Stir well to combine.

Return the cooked ground beef to the skillet. Pour in the soy sauce, oyster sauce (if using), sesame oil, and black pepper. Stir-fry everything for another 3-4 minutes, allowing the flavors to blend.

Remove from heat and sprinkle with chopped green onions before serving.

 

Notes

  • Best Rice for Fried Rice: Day-old rice is ideal because it’s drier and won’t turn mushy. If using fresh rice, spread it out on a tray and refrigerate for 30 minutes before cooking.
  • Oyster Sauce Substitute: No oyster sauce? Use hoisin sauce, fish sauce, or extra soy sauce instead.
  • Customize It: Swap ground beef for chicken, shrimp, or tofu, and add extra veggies like bell peppers, mushrooms, or broccoli for more nutrition.
  • Make It Spicy: Stir in sriracha, chili flakes, or hot sauce for an added kick.
