For the casserole:

  • 1 lb turkey bacon, cooked and crumbled
  • 12 large eggs
  • 2 cups milk

  • 1 tsp onion powder
  • 1 tsp ground mustard
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup diced bell peppers
  • ½ cup diced onion
  • 1 cup diced tomatoes (drained)
  • 1 loaf of French bread, cubed (about 6 cups)

Instructions

Preheat your oven to 350°F (175°C).

In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, ground mustard, salt, and black pepper.

Add the cubed French bread into the bowl, tossing it with the egg mixture until well-coated.

Fold in the turkey bacon, bell peppers, onion, tomatoes, and both cheeses.

Transfer the mixture into a greased 9×13-inch baking dish and spread it evenly.

Bake for 45-50 minutes, or until the casserole is set and golden brown on top.

Allow the casserole to cool for about 5 minutes before serving.
