  • 3 cups cooked chicken, shredded
  • 1 bag (9.75 oz) nacho cheese Doritos, crushed
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • Fresh chopped cilantro or green onions for garnish (optional)

Instructions

    1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
    2. In a large bowl, mix together shredded chicken, cream of chicken soup, sour cream, milk, Rotel, onion powder, garlic powder, chili powder, salt, and pepper.
    3. Add 1 cup of shredded cheese to the mixture and stir well.
    4. Spread half of the crushed Doritos in the bottom of the baking dish.
    5. Pour the chicken mixture over the Dorito layer and spread evenly.
    6. Top with the remaining crushed Doritos, then sprinkle the remaining 1 cup of cheese on top.
    7. Bake uncovered for 25–30 minutes, until hot and bubbly.
    8. Garnish with chopped cilantro or green onions if desired. Serve warm.

Notes

  • Use rotisserie chicken to save prep time.

  • Add the Dorito topping just before baking to keep it crispy.

  • Double the batch for freezing or serving a crowd.

  • To make it milder, skip the chili powder and use plain diced tomatoes.

  • Swap sour cream for Greek yogurt for a healthier alternative.
