Ingredients
For the filling:
- 8 oz (225g) cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
For assembly:
- 10 egg roll wrappers
- Water (for sealing the wrappers)
- Vegetable oil, for frying
For the lemon glaze:
- 1/2 cup powdered sugar
- 1–2 tbsp fresh lemon juice
- 1/2 tsp lemon zest
Instructions
In a mixing bowl, beat the softened cream cheese until smooth. Add granulated sugar and vanilla extract, mixing until well combined. Fold in the diced strawberries.
Lay out an egg roll wrapper on a clean surface with one corner facing you like a diamond. Spoon about 2 tablespoons of the filling onto the center.
Fold the bottom corner over the filling, then fold in the sides. Roll up tightly and seal the top corner with a little water.
Repeat the process with the remaining wrappers and filling.
In a deep skillet or pot, heat vegetable oil over medium-high heat to 350°F (175°C).
Fry the egg rolls in batches until golden brown and crispy, about 2–3 minutes per side. Do not overcrowd the pan.
Remove and drain on paper towels.
In a small bowl, whisk together powdered sugar, lemon juice, and lemon zest to make the glaze.
Drizzle the lemon glaze over the warm egg rolls before serving.
